Ingredients

  • 1 small onion, peeled and chopped
  • 1/4 c butter or cooking oil
  • 1 clove garlic, crushed
  • 1 (10) pkg. frozen chopped spinach..thawed and squeezed dry
  • 2 chicken breasts, cooked and chopped
  • 12 c frozen corn
  • 1/2 black beans
  • 1/2 -1 t ground red pepper
  • 1/4 c fresh cilantro
  • 1 c salsa
  • 1 t cornstarch
  • 1 4 oz can chopped green chiles
  • egg roll wrappers
  • veggie oil for fryig
  • 1 recipe ranch avacado dip

Preparation

Step 1

Saute onion in butter, along with garlic until clear. Add remaining 10 ingredients and heat through slowly. Following the directions on the eggroll pkg, fill wrappers with chicken filling and deep fry in veggie oil until golden brown. Remove and drain. serve immediately with Ranch Avacodo Dip
