FAJITAS - CHICKEN WITH HOMEMADE SALSA

Ingredients

  • Homemade Salsa:
  • 2 whole chicken breasts, skinned, boned and cut in half inch strips
  • 2 green peppers, halved and seeded
  • 1 large white onion
  • 1 clove garlic, minced
  • 2 T. oil
  • 1 tsp. chili powder
  • 1 tsp. oregano
  • 1 tsp. ground cumin
  • 1 - 16 oz. can whole tomatoes
  • 1/2 C. chopped white onion
  • 4 oz. can chopped green chiles
  • 1/2 C. hot to medium hot taco sauce
  • salt and pepper to taste
  • 1 T. chopped fresh Cilantro, optional

Preparation

Step 1

1. In a shallow glass dish, combine garlic, oil, chili powder, oregano and ground cumin. Add chicken breast strips and toss to coat with mixture.
May be refrigerated until cooking time, if desired.

2. Cut peppers and onion into half inch strips. Cover and refrigerate, if desired.

Homemade Salsa:
1. Combine salsa ingredients using the steel knife of a food processor, blender or mixer. Chill.

2. Preheat BURTON STOVE TOP GRILL. Cook chicken strips until done, about 3 to 4 minutes each side, turn frequently. Remove and set aside to keep warm.

3. Brush grill with additional oil, if needed. Cook onion slices and green pepper strips until tender, about 3 to 4 minutes.

Tortillas:
Heat flour tortillas briefly on top of the BURTON STOVE TOP GRILL to warm through.

To serve, place chicken, onion and pepper mixture in warm flour tortillas. Top with salsa, shredded cheddar, sour cream and guacamole.
