SOURDOUGH BREAD STARTER

Ingredients

  • 1 raw Idaho potato
  • 1 cup water
  • 3/4 cup sugar
  • 1 cup flour
  • Sour dough starter food

Preparation

Step 1

Peel potato, and scrape with spoon to get three rounded tablespoons of potato flakes, combine with water in saucepan and stir over medium heat until mixture becomes a smooth paste. While still warm stir in sugar and flour. Let sit in a covered container for seven days at room temperature stirring once a day. On eighth day, feed it starter food.

Starter Food:

3/4 cup sugar, 3 tablespoons instant potatoes, 1 cup warm water. Mix all ingredients well. Take starter out of its container or refrigerator, add mixture to starter. Put in covered container and allow to sit all day with lid on 8-12 hours, mixture will be bubbly. Stir, remove 1-1/2 cups of starter to make bread, return remainder to refrigerator. Keep starter in refrigerator 3 days to 2 weeks, and feed again. If you do not plan to make bread right away, throw away 1 cup or give it to someone to avoid deflating starter.
