TAPIOCA PUDDING (matantes)

Ingredients

  • 1 cup of tapioca
  • 2 ½ cups milk
  • ¾ cup of sugar
  • 1 teaspoon of vanilla
  • nutmeg
  • 2 yellow of eggs

Preparation

Step 1

1. Let the tapioca soak all night in water and drain.
2. Cook in milk (bain marie) for ½ hour.
3. Take off and add vanilla, nutmeg and yellows one by one stirring vigorously.
4. Pour in a greased pan and add a few pieces of butter.
5. Put in an over at 250-300 for 45 minutes.

When ready to serve, cover with a meringue or coconut or even cut apples.
