  • 1 t all purpose flour
  • 1 c granulated sugar
  • 1/3 c butter softened
  • 2 lg egg whites
  • 1 lg egg
  • 1 T grated lemon rind
  • 1 t vanilla extract
  • 1 2/3 c all purpose flour
  • 2 T poppy seeds
  • 1 t baking powder
  • 1/4 t baking soda
  • 1/8 t salt
  • 3/4 c low fat buttermilk
  • 2/3 c powdered sugar
  • 4 t lemon juice

Preparation

Step 1

1. Preheat oven to 350.
2. coat an 8 x 4i inch loaf pan with cooing spray; dust with 1 t flour. Set aside
3. beat granulated sugar and butter at medium speed of a mixer until well blended (about 4 minutes). Add egg whites and egg, 1 at a time, beating well after each addition. Beat in lemon rind and vanilla. Lightly spoon 1 2/3 c flour into dry measuring cups; level with a knife. Combine 1 2/3 flour and next 4 ingredients (flour thru salt) stirring well with a whisk.
