Cucumber Radish Slaw

Ingredients

  • 1/4 cup cider vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 cups thinly sliced English cucumber
  • 2 cups radishes, trimmed and thinly sliced
  • 1 cup red sweet pepper strips
  • 1/4 cup finely chopped green onion (2)

Preparation

Step 1

In a large bowl whisk together vinegar, oil, sugar, salt, and black pepper. Add cucumber, radishes, sweet pepper, and green onion; toss gently to coat. Serve immediately or cover and chill for up to 2 hours.
