SPICE CAKE

Ingredients

  • Icing:
  • 1/2 C. butter
  • 3/4 C. sugar
  • 3 eggs
  • 1/4 tsp. nutmeg
  • 3/4 C. grated semi-sweet chocolate
  • 3/4 C. chopped nuts
  • 1/2 C. raisins
  • 3/4 C. flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • Pinch of salt
  • 12 T. powdered sugar
  • 2-3 T. rum

Preparation

Step 1

1. Preheat oven to 350°F. Grease loaf pan.

2. Put butter in a bowl. Add sugar and beat until light. Beat in eggs one at a time. Add flour, baking powder, nutmeg, cinnamon and salt. Beat 2 minutes. Mix grated chocolate, raisins and nuts and fold into batter.

3. Pour into greased loaf pan and bake
on first rack from bottom for 50 minutes.

To Make Icing:
4. Put sugar in small bowl. Pour in rum. Mix until smooth and shiny.

5. Turn cake out on rack. While still warm cover with icing.
