ANGEL FOOD CAKE - WITH WARM SUGARED BLACKBERRIES AND CREME FRAICHE

Ingredients
- CREME FRAICHE:
- 6 slices Angel Food cake
- 2/3 C. sour cream
- 2/3 C. whipping cream OR
- 1 1/3 C. store bought
- SUGARED BLACKBERRIES:
- 1/3 C. cassis (or other berry liqueur)
- 3 T. unsalted butter
- 2 T. superfine sugar
- 1-1/2 C. blackberries

Step 1
CREME FRAICHE:
1. Make in advance: in sealed jar, shake together sour cream and whipping cream. Leave at room temperature for 12 hours before chilling. Makes 1 1/3 C.
BLACKBERRIES:
2. In skillet or small saucepan, cook cassis, butter and superfine sugar over medium heat for about 3 minutes or until slightly thickened.
3. Reduce heat to low and add blackberries, stirring to coat. Using back of a fork, crush 7 or 8 berries; this will help thicken sauce. Gently stir berries in syrup about 2 minutes or until heated through. Remove from heat. Makes about 1-1/2 C. sauce
4. To serve, place slices of cake on dessert plates and top with dollops of creme fraiche. Spoon warm berries and syrup over top. Serve immediately.
