Ingredients

  • BEEF INGREDIENTS:1 pound sirloin sliced thinly into 1.5x1.5 pieces

    egg white

  • 2

    tbsps. plus 1 tsp. vegetable oil, divided

    tsps. corn starch

  • 1/4

    tsp salt

  • SAUCE INGREDIENTS":

  • 1

    tbsp Chinese cooking wine or sherry

  • 2

    tsps. oyster sauce

  • 1

    tbsp. light soy

  • 1/2

    tsp. sugar

  • 1

    tsp. finely minced garlic

  • 1/4

    tsp minced ginger

  • 1/2

    tsp. red chili flakes

  • 1/2

    tsp. black pepper

  • 1/2

    cup canned bamboo shoots, rinsed

  • 1

    cup broccoli florets

  • 1/2

    tbsp. corn starch mixed with2 tbsp. cold water

  • 3

    green onions chopped into 3" pieces.

Directions

1. In a large bowl, mix together the egg, 1 tsp. oil, corn starch and sliced beef. Cover and set aside to marinate for 1/2 hour. 2. Heat 2 tbsps. oil in wok over high heat. Add the beef and sauté until lightly browned but not complete4ely cooked through. 3. Transfer to a plate and wipe to remove excess oil. 4. Mix together wine, oyster sauce, soy, and sugar. 5. Add garlic, ginger, chili flakes, pepper, and bamboo shoots to same wok and sauté until fragrant. Add the beef and broccoli and saute 2-3 minutes. Add the sauce mixture and bring to a boil. Stir in the cornstarch slurry, as needed, and mix until it thickens. Add the green onion and re3move from heat. 6. Serve with steamed rice.
