Ingredients
- 2 1/4 C. flour, divided
- 1 C. melted butter
- 1/2 C. confectioners sugar
- 2 C. brown sugar
- 2 tsp. vanilla
- 4 eggs
- Juice of 1/2 lemon
- 1 tsp. baking powder
- 1 1/2 C. shredded coconut
Preparation
Step 1
1. Preheat oven to 350°F.
2. Combine by hand or mixer 2 C. flour, butter and confectioners sugar to form a soft dough. Spread into a 13x9 inch pan. Bake 20 minutes or until set.
3. Beat together brown sugar, vanilla eggs and lemon juice. Stir in remaining 1/4 C. flour, baking powder and coconut. Pile mixture on cooked pastry base.
4. Bake at 350°F for about 20 minutes, or until set. Cool and cut into bars.
