Cucumber Salad w/ Sweet/Sour Dressing

Summer cuke salad.

Ingredients

• 1 cuke
• 2 T water
• 2 T red wine vinegar
• .5 to 1 ts salt
• .5 ts sugar
• 1/8 ts pepper
• 2-3 T olive oil
• 1 T chopped chives, red onion or shallots
• Paprika

Preparation

Step 1

Peel cuke and slice thin into bowl. Mix everything together and chill for one hour. Add more seasoning and paprika as garnish. Enjoy.
