FRENCH TOAST - BUTTERMILK WITH WARM BERRY COMPOTE

Ingredients

  • Berry Compote:
  • 8 eggs
  • 2 C. buttermilk
  • 1/2 tsp. cinnamon
  • nutmeg
  • 1/2 C. sugar
  • 2 loaves french bread
  • Butter
  • Pinch salt
  • 2 tsp. unsalted butter
  • 1/2 c. sugar
  • 2 T. fresh orange juice, strained
  • 1/2 pint blueberries
  • 1/2 pint raspberries
  • 1/2 pint blackberries
  • 1 pint strawberries

Preparation

Step 1

Combine eggs, milk, cinnamon nutmeg & salt. Whisk. Cut bread on angle to 3/4" thick. Thoroughly soak in egg mixture. Chill covered, on baking sheet 1 hour. Cook in butter over medium heat.

For Compote:
Melt butter in medium saute pan. Add sugar and orange juice; cook until sugar begins to dissolve, about 2 minutes. Add blueberries and cook until they begin to release juice, about 1 minute. Add remaining fruit and cook until soft and ready to burst - about 2 minutes. Shake pan gently - do not crush berries. Serve immediately.
