Michael Symon's Pierogi

Ingredients
- PIEROGI DOUGH:
- 1 egg
- 3/4 cup sour cream
- 8 tablepoon butter
- 1 tablepoon fresh cut chives
- 1 teaspoon salt
- 2 cups flour
- FILLING:
- 2 cups mashed potatoes
- 2 med sliced onions
- Salt
- Sour cream
- 1/2 cup farmers cheese
- 3 tablespoons butter

DOUGH:
Work the egg, sour cream, butter, chives and salt together by hand to form a dough. Add the flour and mix thoroughly with your hands until a dough forms. Wrap in plastic and refrigerate for 2 hours or overnight.
FILLING:
Mix all the cheese with the potatoes to make one filling. Caramelize onions and butter, then keep warm in the same large skillet.
Roll out the dough in 2 batches. Roll 1/8 th inch thick. Cut into 3 inch rounds. Spoon 1 tablespoon filling onto center, fold to half moon, press edges with a fork.
Bring a large pot of salted water to a boil. Add the pierogi and coke till they float and then an additional 4 minutes. Drain and add to the pan of caramelized onions. Then serve with sour cream.
