pasta salad

Ingredients

  • 3/4 cup olive oil
  • 1/2 cup white vinegar
  • 3 cloves garlic, minced
  • 2 tps dijon mustard
  • 1/2 cup parmesan cheese
  • 1 tbls fine cut basil
  • 1 lb spiral cooked pasta
  • 1 lb spinach, cut
  • 3 tomatoes,chopped
  • 1 bunch scallions, chopped
  • 1 cup feta cheese, crumbled
  • 1 large cucumber thinly sliced
  • salt and pepper

Preparation

Step 1

Make dressing. Cook pasta and drain. Place pasta in large bowl and pour 1/2 dressing on pasta. Toss and refrigerate.

When thoroughly chilled, add all ingredients except spinach. Toss well and refrigerate. Just before serving, add spinach and toss again.

You may add grilled chicken or tuna to this salad.
