SCRAMBLED EGGS - FIESTA

Ingredients

  • 4 Azteca Salad Shells
  • 1 lb. bulk beef or pork sausage
  • 1/4 C. green onion chopped
  • 2 T. red bell pepper, chopped
  • 12 eggs
  • 2 T. Cold water
  • 1 C. cheddar cheese, shredded

Preparation

Step 1

Preheat oven to 350°F.

Prepare salad shells according to package directions.

Brown sausage in large frying pan. Add green onion and red pepper. Cook over medium high heat for 5 minutes. Drain sausage mixture.

Beat together eggs and cold water. Add eggs to sausage mixture and stir until eggs are cooked (about 3 minutes). Spoon mixture into prepared shells and top with shredded cheese. Place on ungreased baking sheet. Bake at 350° for 3-5 minutes or until cheese is melted.
