MUFFINS - APPLE AND OAT BRAN

Ingredients

  • 1 1/4 C. whole wheat flour
  • 1 C. oat bran
  • 1/3 C. packed brown sugar
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. ground cinnamon
  • 1 C. buttermilk
  • 2 egg whites
  • 2 T. cooking oil
  • 3/4 C. shredded, peeled apple
  • Nonstick spray coating

Preparation

Step 1

1. Preheat oven to 375 degrees.

2. In a medium bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg, and cinnamon, Set aside.

3. In a small bowl combine buttermilk, egg whites, and oil. Add to dry ingredients; stir just till moistened. Stir in shredded apple. Store batter, tightly covered, in the refrigerator for up to 5 days.

4. To bake, spray muffin cups with nonstick spray coating. Spoon about 1/4 C. batter into each muffin cup. Bake in a 375° oven for 18 to 20 minutes or till a toothpick inserted near the center comes out clean.
