Ingredients
- 1 C. all purpose flour
- 1/2 C. whole wheat flour, oat burn or all purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 2 large eggs
- 3/4 C. dark brown sugar, firmly packed
- 1/4 C. vegetable oil
- 1 tsp. vanilla extract
- 3/4 C. diced, unpeeled tart apples
- 3/4 C. fresh or frozen cranberries
- 1/2 C. chopped walnuts
Preparation
Step 1
1. Preheat oven to 350°F. Grease bottoms of 12 medium muffin cups.
2. Mix flours, baking soda, cinnamon and salt together in a large bowl.
3. Whisk eggs and sugar together in a medium bowl until smooth. Whisk in oil and vanilla. Stir apple, cranberries and walnuts into the egg mixture.
4. Pour over dry ingredients. Fold in just until dry ingredients are moistened. Scoop batter into muffin cups. Bake for 20-25 minutes or until browned and firm to the touch. Turn out onto rack. Let cool.
NOTE: DO NOT FREEZE
