Ingredients
- 8 lasagna noodles
- 3 chicken breasts
- 12 oz. sour cream
- 2 cans Cream of Chicken Soup
- 1 big bag of shredded Mexican cheese
- 1/4 cup milk
- 1 cup sliced green onion tips
- 1 can sliced olives
- 1 package taco seasoning
- Crushed Dorito chips - enough to cover the top of the casserole
Preparation
Step 1
Spray casserole pan with cooking spray.
Preheat oven to 375 - 400 degrees.
Boil noodles until soft, then drain.
While the noodles are cooking, cut chicken into cubes and put in frying pan with oil. Keep on medium heat for about 15-20 minutes - there is no need to brown the chicken, as it will continue to cook in the oven with the rest of the casserole.
Mix together in a big bowl: sour cream, cream of chicken soup, Mexican cheese (2/3 of bag) and milk.
In a smaller bowl, combine olives, onions, taco seasoning and chicken.
In the casserole pan, layer noodles, sour cream mixture and chicken mixture. Repeat with the top layer being the chicken mixture.
Bake for 20 minutes. Sprinkle with crushed Doritos and remaining cheese on top. Bake for another 10 - 15 minutes or until cheese is melted.
Let stand ten minutes before serving.
