Irish Soda Bread

Ingredients

  • 2 3/4 cups of flour
  • 3 tbs. sugar
  • 1/2 tsp. salt
  • 1 tbs. caraway seed
  • 1/2 tsp. baking soda
  • 1 pkg. of dry yeast
  • 1 cup of buttermilk, or sour milk
  • 2 tbs. margarine
  • 3/4 cup of dark seedless raisins

Preparation

Step 1

Melt butter and milk until it reaches 120 to 130 degrees
Add to dry ingredients, gradually beat slowly.
Knead. Stir in raisins. Cover bowl and let rise for 50 minutes. Punch down. Turn out onto floured board and knead for until firm and it forms a smooth, round ball. Place on greased baking sheet and press into 8" circle. Let rise for 50 minutes (until doubled). Cut a cross and bake at 350 degrees for 30 minutes.
