COFFEE CAKE - CINNAMON WHOLE GRAIN

Ingredients

  • 1/2 cup butter or margarine, softened
  • 1/2 cup vegetable shortening
  • 1 2/3 cups sugar
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 1/2 cups unbleached flour
  • 3/4 cup millet flour
  • 3/4 cup whole wheat flour
  • 1/3 cup sugar
  • 2 tablespoons cinnamon

Preparation

Step 1

Preheat oven to 350°F. Grease and flour a 12" fluted tube pan. Assemble Oster "Kitchen Center" mixer. In large mixer bowl, cream together butter, shortening, sugar and vanilla at Medium. Add eggs, continue to beat. Add baking powder and salt, mix at Medium-Low. Add milk and flours alternately, beating well after each addition at Medium-Low. Spread III of batter into prepared pan. Mix together 1/3 cup sugar and cinnamon. Sprinkle half of mixture evenly over batter in pan. Cover with 1/3 more batter. Sprinkle remaining cinnamon sugar mixture evenly over batter. Top with remaining batter. Bake in preheated oven 55-60 minutes until toothpick inserted into cake comes out clean. Cool in pan 10 minutes. Remove from pan.
