ORANGE OATMEAL MUFFINS

From a Quaker oatmeal cookbook

Ingredients

  • 1 cup oats
  • 1/2 cup orange juice
  • grated rind of 1 orange
  • 1/2 cup boiling water
  • 1/2 cup melted butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 1/4 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla

Preparation

Step 1

Soak oatmeal in orange juice and boiling water for 15 minutes

Add orange rind

Beat eggs into oat mixture.

In seperate bowl cream butter, sugars. Combine oat mixtures and vanilla.

Sift dry ingredients and fold gently

Bake at 350 for 20-22 minutes
