Ingredients
- 1 (15-oz.) can garbanzo beans, drained and rinsed
- 1 medium red bell pepper, seeded, deribbed and finely chopped
- 1 medium carrot, peeled and grated
- 3 cloves garlic, minced
- 1 red chili pepper, seeded and minced
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon tahini paste
- Salt and pepper, to taste
- 1 teaspoon olive oil (optional)
- Non-aerosol cooking spray
- 4 whole wheat burger buns, split
- Lettuce leaves
- Tomato slices
- Burger condiments (your choice)
Preparation
Step 1
Place all ingredients in a blender container or the bowl of a food processor; cover and pulse 5 times. Scrape the sides of the container or bowl; pulse until evenly mixed. If mixture looks dry, add olive oil. Refrigerate mixture for 30 minutes. Shape chilled bean mixture into 4 patties. Coat a large skillet with cooking spray over medium-high heat; add bean burgers and cook until heated through and golden on both sides. Serve on buns with lettuce, tomato and desired condiments.
