ZUCCHINI SPICE CAKE

  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • ¾ cup firmly packed brown sugar
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1 cup shredded unpeeled zucchini
  • ½ cup skim milk
  • 2 Tbsps vegetable oil
  • 1 tsp vanilla
  • 1 egg
  • ¼ cup toasted walnuts

Preparation

Step 1


Combine first 8 ingredients in a bowl. Add zucchini and next 4 ingredients; stir well. Stir in walnuts. Pour batter into an 8-linch square baking pan coated with cooking spray. Bake at 350 degrees for 35 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.
