ROMERTOPF - Maple Roasted Winter Vegetables

Beets will turn all the vegetables pink.
Total time required 1 hour and 15 minutes.

Ingredients

  • 1 sliced carrots
  • 1 sliced parsnips
  • 1 small peeled yellow turnip
  • 1 small peeled white turnip
  • 1 small cubed butternut squash
  • 1 small zucchini, sliced
  • 1 small beet (optional)
  • 4 teaspoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper
  • 2 1/2 tablespoons maple syrup

Preparation

Step 1

Soak the Romertopf pot for at least 15 minutes.
Preheat the oven to 400°.
* Cube all the vergetables into 3/4 inch pieces
* Place the vegetables in the soaked pot.
* Toss with olive oil and seasonings.
* Cover and bake for 30 minutes.
* Add the maple syrup, stir well
* Bake uncovered for 30 minutes longer, stir every 10 minutes.
