ROMERTOPF - Maple Roasted Winter Vegetables

Ingredients
- 1 sliced carrots
- 1 sliced parsnips
- 1 small peeled yellow turnip
- 1 small peeled white turnip
- 1 small cubed butternut squash
- 1 small zucchini, sliced
- 1 small beet (optional)
- 4 teaspoons olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon fresh ground black pepper
- 2 1/2 tablespoons maple syrup
Preparation
Step 1
Soak the Romertopf pot for at least 15 minutes.
Preheat the oven to 400°.
* Cube all the vergetables into 3/4 inch pieces
* Place the vegetables in the soaked pot.
* Toss with olive oil and seasonings.
* Cover and bake for 30 minutes.
* Add the maple syrup, stir well
* Bake uncovered for 30 minutes longer, stir every 10 minutes.
