Pumpkin Muffins

I make up a batch of muffins, bake, cool, and store in a Ziploc bag in the refrigerator for “hungry moments.”

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar or 1/3 cup fructose
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup skim evaporated milk
  • 1/2 cup pumpkin
  • 1/4 cup canola oil
  • 2 egg whites
  • 1/2 cup raisins (optional)

Preparation

Step 1

Place all dry ingredients and raisins in a large mixing bowl and make a well in the center. Add wet ingredients in the well and mix. Do not beat. Spray a muffin tin with food spray. Spoon mixture into the tin. Bake in 350 F oven 20 minutes.
