Westport Cranberry Relish

Ingredients

  • 3 cup whole Cranberries
  • 1 large Navel Orange, unpeeled & quartered
  • 1 tart Apple, unpeeled, cored & quartered
  • 3/4 cup Sugar
  • 1/8 tsp. Salt
  • 1/4 tsp. cinnamon
  • 1/2 cup Golden Seedless Raisins
  • 1/2 cup dried Apricot
  • 1/2 cup chopped Pecans

Preparation

Step 1

Coarsely grind the oranges, apples, cranberries & stir in sugar, salt and cinnamon. Set aside.

Cook raisins and apricots in ½ cup water over medium heat, until raisins are plump (about 5-10 min). Drain.

Stir raisins, apricots & pecans into relish.

Refrigerate overnight to allow flavors to blend. (leftovers are great in muffins or nut breads)
