Copycat Kona Pie

This dessert was a favorite of my family that was served at a restaurant called 'Island Burger'. They closed down in my area years ago. My husband asked me to come up with an alternative and this luckily was spot on. You could use any flavor or brand of ice cream you like. This one is our personal favorite. You can save some time by using a ready made Oreo crust. It's not as pretty but it does taste just as good.

Ingredients

  • 1 cup Oreo Cookie Crumbs
  • 1-2 Tbsp Melted Butter
  • 1 Carton Edy's Espresso Chip Ice Cream (Softened)
  • 1 cup Semisweet Chocolate Chips
  • 1/2 cup Heavy Cream
  • 1/2 tsp vanilla extract

Preparation

Step 1

Preheat oven to 350*. In a bowl, mix Oreo cookie crumbs and enough melted butter to form crust. Press crumbs into bottom of an 8 inch spring form pan. Bake crust for about 15 minutes. Let crust and pan cool completely. Spread softened (not melted) ice cream evenly onto crust. You might need to put softened ice cream into a bowl and mix a bit before adding to the crust. Place into freezer and let ice cream harden, (About 3 Hours) Place chocolate chips into heatproof bowl. Bring heavy cream just to a simmer in a small pan and pour hot heavy cream over chocolate chips. Let sit for a couple of minutes to melt the chips. Add vanilla extract and mix thoroughly. Remove frozen pie from freezer and spread chocolate ganache evenly over ice cream. (Try to do this fairly quickly so as not to melt the ice cream too much, you want a nice layer of fudgy ganache on top of the pie) Place back in freezer for at least an hour to set, then enjoy.
