Ingredients

  • salt and pepper
  • 10 roasted tomato halves, roughly chopped
  • 1/2 cup extra virgin olive oil (or 3 Tbsp)
  • 3 Tbsp. capers (optional)
  • 2 tsp. fresh lemon juice
  • 1 lb of spaghetti (or 3/4 a lb, but why not use the whole box)
  • handful of fresh basil leaves
  • red pepper flakes

Preparation

Step 1

Set a large pot of salted water to boil. Meanwhile, in a bowl, combine tomatoes, oil, capers, and lemon juice; season with salt and pepper. Cook pasta until al dente. Drain pasta and return to pot; toss with tomato mixture. Serve pasta topped with basil and sprinkle on red pepper flakes to taste.
