- 1/3 C. vegetable oil
- 3 T. freshly squeezed lemon juice (1-2 lemons)
- 1 1/2 T. soy sauce
- 1 clove garlic, finely minced
- 1/2 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 2-4 chicken breasts

Combine all ingredients except chicken, whisk until well blended. Pour into large Ziplock and add chicken. Press out all of the excess air in Ziplock and seal tightly. Refrigerate up to 10 hours, but a minimum of 3 hours. Grill 6-7 minutes per side, or until chicken is cooked through. Rest 5 minutes before serving.
Baking Directions: preheat oven to 350. Place chicken in baking dish and pour excess marinade over them. Bake approximately 45 minutes. Remove from oven and let rest 5 minutes before serving.
