Ingredients
- 3/4 cup low fat plain yogurt
- 1/4 cup cucumber, seeded and finely chopped
- 1 tablespoon finely chopped fresh dill
- 1 tablespoon olive oil
- 3 medium onions, sliced into rings
- 3/4 pound 95% lean ground beef, cooked and drained
- 1 1/2 teaspoons garlic powder
- 1/4 teaspoon dried oregano, crushed
- 6 whole wheat pita breads, warmed
- 1/2 cup chopped tomatoes
Preparation
Step 1
In a small bowl, combine yogurt, cucumber and dill; cover and refrigerate. Heat the oil in a large skillet over medium-high heat; add onions and cook for 2 minutes, stirring occasionally. Add cooked beef, garlic powder and oregano; cook for 4 minutes or until beef is heated through, stirring occasionally. Blot up any fat with paper towels. Stuff beef mixture in warmed pita breads; garnish with yogurt sauce and chopped tomatoes.
SERVING SUGGESTION: A salad of mixed baby greens, sliced red onion and crumbled Feta cheese, tossed with Easy Balsamic Vinaigrette (see recipe).
GLUTEN FREE: Make sure yogurt and pita breads are gluten free.
