Ingredients
- 1 Spaghetti Squash ( ˜ 4 lbs.)
- 2 Tbs Butter or Margarine
- 1/8 cup Onion - minced
- 1/4 cup Green Bell Peppers - diced
- 1/4 cup Red Bell Pepper - diced
- 1/2 tsp Dried Oregano -crushed
- 1/4 tsp Dried Marjoram - crushed
- 1/4 cup Dried Basil - crushed
- 1/4 cup Garlic - minced
- 2 cups Monterey Jack - shred3
- Salt & Pepper
Preparation
Step 1
1.) Pierce Squash w/ fork in several places. Place on baking sheet & bake @ 350° for 45 min. Turn & bake 45 min. longer, or until shell yields to pressure. Then Cool.
2.) When cool enough to handle, cut Squash in half. Scoop out & discard seeds. Remove Spaghetti w/ a fork & reserve.
3.) Melt Butter in skillet. Sauté Onion & Green and Red Peppers until tender. Add Squash stands, Oregano, Marjoram, Basil, Garlic, Cheese & Olives. Season to taste w/ Salt & Pepper. Toss until cheese is evenly distributed. Place in 1-1/2 Qrt. casserole & return to oven until cheese is melted, ˜ 10 to 15 min.
