Asian Noodles

Ingredients

  • 8 tsp soy sauce
  • 4 Tbs rice vinegar
  • 2 Tbs vegetable oil
  • 4 tsp sesame oil
  • 3 tsp minced peeled ginger
  • 4 garlic cloves, minced
  • 1 lb thin spaghetti (or Angel hair pasta)
  • 2 medium carrots, peeled, cut into matchstick-size strips
  • 1 small red pepper, cut into matchstic-size strips
  • 1 cup frozen peas
  • 1/3 cup thinly sliced green onions
  • 5 Tbs chopped fresh cilantro

Preparation

Step 1

Whisk soy sauce, rice vinegar, vegetable oil, sesame oil, garlic and giner in large bowl for dressing.

Cook pasta in pot of boiling salted water until almost tender. Add carrots and peas during the last 2 minutes of cooking. Drain. Transfer to serving bowl.

Toss in dressing with onions and 4 tablespoons cilantro. Season with salt and pepper. Use 1 tablespoon cilantro for garnish.
