Ingredients
- 1/2 C. (1 stick) butter, softened
- 1/3 C. sugar
- 1 T. molasses
- 1 large egg
- 1 C. unsifted all-purpose flour
- 1/2 C. whole-wheat flour
- 1/2 C. quick rolled oats
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 C. buttermilk
- 1/4 C. chopped starfruit
- 1/4 C. sweetened flaked coconut
- 1 T. grated lemon rind
- 12 slices starfruit
- Confectioners' sugar (optional)
Preparation
Step 1
1. Grease twelve 2 1/2-inch muffin-pan cups. In large bowl, with electric mixer, beat together butter and sugar until fluffy. Add molasses and egg; beat until well blended.
2. Heat oven to 375°F. In medium-size bowl, combine flours, oats, baking soda, baking powder, cinnamon, and salt. With wooden spoon, stir flour mixture into butter mixture alternately with buttermilk, beginning and ending with flour mixture. Fold in chopped star fruit, the coconut, and lemon rind.
3. Divide muffin batter into greased muffin-pan cups, filling each two thirds full. Top each filled cup with one slice star fruit.
4. Bake muffins 20 to 24 minutes or until muffins are golden and centers spring back when lightly pressed with fingertip. Cool in pan on wire rack 5 minutes. Remove muffins from pan;
sprinkle with confectioners'. sugar, if desired.
