Horse-radish Meat Loaf

Meat loaf with a kick. You'll be amazed by how much pizzazz meat loaf gains with the addition of horse radish. Try a leftover slice of this loaf on a sandwich.

Ingredients
- For meatloaf:
- Horseradish in the meat mixture and the saucy topping creates a pleasantly pungent flavor throughout this meat loaf.
- 2 pounds groud beef
- 3/4 cup uncooked regular oats
- 1 large onion, chopped
- 1/2 cup ketchup
- 1/4 cup milk
- 2 large eggs, lightly beaten
- 1 tbsp prepared horseradish
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- For topping:
- 1/2 c. ketchup
- 3 tbsp. brown sugar
- 1 tbsp. prepared horseradish
- 2 tsp. spicy brown mustard
Preparation
Step 1
Combine loaf mixture in large bowl; stir well. Form beef mixture into a loaf, and place in 9 x 5 inch loafpan.
Combine topping ingredients. Spoon half of ketchup mixture over top of meat loaf. Bake, uncovered, at 375 for 1 hour and 15 minutes. Spoon remaining ketchup mixture over loaf, and bake 10 more minutes. Remove to a serving platter. Yeild: 8 servings.
