Cornmeal and Carrot Bread

Ingredients

  • 1 cup finely grated carrots
  • 1 cup cornmeal
  • 2 tbsp oil
  • 3/4 cup water
  • 1 tbsp fructose (sugar)
  • 1 tsp salt
  • 2 eggs, separated
  • 1 cup zucchini (grated), optional

Preparation

Step 1

Blend all ingredients except egg white. Beat egg whites until stiff and fold into mixture. Pour into an oiled baking loaf and bake in a 400 F oven for 25 minutes.
