MUFFINS - MAPLE WALNUT

Ingredients

  • 1 C. whole wheat flour
  • 1 C. white flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 C. pure maple syrup
  • 4 T. unsalted butter, softened
  • 1/4 C. sour cream
  • 1 egg
  • 1/2 C. water
  • 1 tsp. vanilla
  • 3/4 C. chopped walnuts

Preparation

Step 1

1. Preheat oven to 400 degrees.

2. Sift together whole wheat flour, white flour, baking powder and salt.

3. In a separate bowl beat together maple syrup, butter, sour cream and egg until smooth. Stir in water and vanilla.

4. Fold in dry ingredients quickly, then stir in chopped walnuts. Spoon into the greased molds of a muffin pan, two-thirds full, and bake in a preheated 400°oven for 20-25 minutes.
