Corn Bread

Corn bread is great any time and with just about anything from jam and fruit to chili and beans. Make a batch, freeze, and enjoy!

Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 2 tbsp sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup skim evaporated milk
  • 1/4 cup canola oil
  • 2 egg whites

Preparation

Step 1

Place dry ingredients in a large mixing bowl. Mix and make a well in the center of the flours. Add wet ingredients and mix well. Do not beat. Pour or spoon batter into nonstick muffin tins or baking pan that has been sprayed with vegetable food spray. Bake in a 350 F oven until browned on top.
