  • 6 OUNCES BACON
  • 1/4 CUP MINCED SHALLOTS
  • 2T MINCED GARLIC
  • 1/4 CUP DICED CELERY
  • 1/4 CUP DICED ONION
  • 1/4 POUND BUTTER
  • 2 CUPS FLOUR
  • 1/4 CUP WHITE WINE
  • 1 CUP OYSTER LIQUOR
  • 1 CUP HALF AND HALF
  • 1 CUP HEAVY CREAM
  • 1/ 4 CUP LIGHTLY PACKED BASIL
  • 6 OUNCES BABY SPINACH - HALF CHOPPED
  • 4 OUNCES CRAB MEAT
  • 4 OUNCES CRAWFISH TAILS
  • 2 T BLACKENING SEASONING
  • 1 T OLD BAY SEASONING
  • 1 T BLACK PEPPER
  • 4 OUNCES PARMESAN CHEESE

Preparation

Step 1

Render bacon and discard 1/2 bacon fat. Add your vegetables and sweat with bacon and butter until translucent and add flour to combine well. Add oyster liquor and white wine and bring to a boil. Reduce heat and simmer. Add half & half and heavy cream 1 at a time and combine well. Add seasonings, crab and crawfish. Then add basil and spinach and let that wilt down and then add parmesan and simmer for 5 minutes. Pour into shallow sheet pan and cool.
