Thyme Cookies

Ingredients

  • 1 stick unsalted butter, left out OVERNIGHT
  • 3/4 cup grated parmesan
  • 1 1/4 cups flou
  • 1/4 tsp kosher salt
  • 1 tsp fresh thyme leaves, chopped
  • 1/2 tsp freshly ground black pepper

Preparation

Step 1

Leave butter out overnight to bring to room temperature.
Beat butter until creamy. Add remaining ingredients and combine. Add 1 Tbsp water at a time until a ball can be formed (takes different amounts at different humidity levels). On lightly floured board, roll ball into 13" log. Wrap in plastic wrap and place in freezer for 30 minutes to harden.
Preheat oven to 350 degrees.
Cut log into 1/4" to 1/2" thick slices. Place on sheet pan. Bake for 22 minutes or until lightly browned.
