Cheese-filled Deltas

Ingredients

  • 1/2 lb. feta cheese
  • 1 cup cottage cheese
  • 2 eggs
  • dash of nutmeg
  • salt and pepper to taste
  • 1 lb. filo leaves
  • 1/2 lb. butter, melted

Preparation

Step 1

Mash feta cheese. Add cottage cheese and eggs, one at a time. season with nutmeg, salt and pepper. Preheat oven to 350 degrees. Unfold the entire pound of filo leaves. with a long knife, cut the pile of leaves horizontally into six strips. Lay out 2 strips of filo atop each other, keeping remaining sheets covered with a dish towel or plastic wrap. Use a pastry brush to spread top sheet lightly with melted butter; use broad strokes and work fast to avoid getting butter too thick and breaking sheets. Place a teaspoon full of cheese mixture on one end of the top filo strip and fold over one corner to make a triangle. Continue folding pastry from side to side, making a triangular delta. Place on a lightly buttered baking sheet. Brush deltas with melted butter. Proceed in this manner, making pastry deltas with remaining sheets and filling. At this point, deltas can be wrapped and frozen to be baked later. Bake at 350 degrees 15-20 minutes, until golden. Makes 72. Serve as an appetizer, to accompany a salad or along with a casserole such as moussaka.
