Penne Bruschetta

Ingredients

  • 4 cups diced plum tomatoes
  • 1/3 cup olive oil
  • 1/4 cup packed fresh basil, thinly sliced
  • 3/4 tbs balsamic vinegar
  • 1 tbs minced garlic
  • 1/4 tsp pepper
  • 1 lb. penne
  • 3/4 tsp salt
  • 1/4 cup parmesan cheese

Preparation

Step 1

Combine tomatoes, oil, basil, vinegar, garlic and pepper. Let stand 15 minutes. Cook pasta and drain. Heat large non-stick skillet over high heat. Add tomatoes and salt and cook until hot, 2-3 minutes. Toss with pasta, serve with cheese.
