Ingredients
- 4 cups diced plum tomatoes
- 1/3 cup olive oil
- 1/4 cup packed fresh basil, thinly sliced
- 3/4 tbs balsamic vinegar
- 1 tbs minced garlic
- 1/4 tsp pepper
- 1 lb. penne
- 3/4 tsp salt
- 1/4 cup parmesan cheese
Preparation
Step 1
Combine tomatoes, oil, basil, vinegar, garlic and pepper. Let stand 15 minutes. Cook pasta and drain. Heat large non-stick skillet over high heat. Add tomatoes and salt and cook until hot, 2-3 minutes. Toss with pasta, serve with cheese.
