Chz Enchiladas (tofu/ricotta)

Ingredients
- 6 oz block of firm tofu or 6 oz ricotta
- 1/2 pkg taco seasoning
- 1 cup cottage chz
- 1 1/2 cup ched chz
- cooking spray
- 6 oz tom paste
- 1 pkg enchilada sauce mix
- water
- 8-10 white corn tortillas

Preparation
Step 1
In a blender mix tofu/ricotta, taco seasoning and cottage. Pulse for a few secs-stir and repeat until smooth. Fold in 3/4 ched. Set aside. Spray casserole dish. In a sep bowl, combine enchilada sauce with recommended water-spoon 1/2 cup of sauce on bottom of cass dish. Warm tortillas one at a time in micro, then fill with 3 spoonfuls of chz mix. Roll and place seam down. Spoon remaining sauce and top with remaining chz. Bake at 350 for 20 mins or until thoroughly heated.
