Lentil Rice Soup

This soup is great for a crock pot. Put everything in the pot in the morning. Set it on low and let it cook all day while you’re busy doing something else.

Ingredients

  • 2 quarts vegetable stock
  • 1 cup dry lentils, washed
  • 1 cup rice
  • 1 (25 oz) can crushed tomatoes
  • 1 onion, chopped
  • 1 potato, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 2 tsp mixed Italian seasonings
  • 2 tbsp dried parsley flakes
  • 1/4 tsp pepper

Preparation

Step 1

Combine all ingredients in a large stockpot and bring to a boil. Cover the pan and reduce heat to a simmer. Cook until rice and lentils are tender, approximately 45 minutes. This makes a thick soup, which can be thinned, if desired, with additional stock. Season to taste.
