Zucchini Cake

Ingredients

  • 1 cup sugar or 1/2 cup honey
  • 1/2 cup oil
  • 1 tbsp vanilla
  • 2 eggs
  • 3/4 cup cooked zucchini
  • 1 cup rice or buckwheat flour
  • 1/2 cup wheat germ
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 cup chopped walnuts

Preparation

Step 1

Mix sugar or honey, oil, vanilla. Beat in 2 eggs, one at a time. Add zucchini, flour, wheat germ, salt and baking powder. Mix until well blended, then stir in ¼ cup chopped walnuts. Bake in oiled loaf pan at 350 F or 180 C until raised, then turn oven to 400 F or 200 C until done.
