Ingredients
- SAUCE:
- 14 large cucumbers with peel, quartered, seeds removed
- 10 medium onions
- 2 red peppers, seeded
- 2 gree peppers, seeded
- 1/3 cup coarse salt
- 8 cup granulated sugar
- 5 tbsp dry mustard powder
- 2 tbsp ground ginger
- 1 tbsp turmeric
- 1 cup water
- 4 cups white vinegar
- 1/3 cup cornstarch
- 1/4 cup water
Preparation
Step 1
Grind first 4 ingredients into large bowl. Add salt. Cover and let stand overnight on counter. Drain next morning.
SAUCE: Stir first 4 ingredients well in large heavy pot. Mix in water. Add vinegar. Stir well. Add drained vegetables. Heat on medium-high, stirring often until it comes to a boil. Boil 10 minutes, stirring occasionally.
Mix cornstarch and water in small bowl. Stir into boiling mixture. Return to a boil. Boil 1 minute, continuing to stir until thickened. Pour into sterilized jars to within 1/4 inch of top. Seal.
