Steamed “Coffee Can” Bread

This recipe takes a little more time to set up and cook. It’s a fun project for a rainy day or a special occasion. You’ll need 4 empty 1 lb size coffee cans and a large canning type pot with a rack in it to make this recipe. Our ancestors used to make bread this way in the winter when the wooden stove was going all the time to keep the house warm. No energy was wasted and the smell of bread on the stove was heart-warming!
Ingredients
- 1 cup flour
- 1 cup cornmeal
- 1 cup whole wheat flour
- 2 tsp baking soda
- 1/2 tsp salt
- 2 cups buttermilk
- 1 cup molasses
- 1 cup raisins
- Buttery Spread (recipe in collection)
Preparation
Step 1
Spray the 4 coffee cans with vegetable food spray. Mix the dry ingredients in a bowl. Make a well in the center. Add the wet ingredients. Mix, but do not beat. Spoon batter into coffee cans. Place coffee can on the rack in the large pot. Pour water in the pot up to the top of the rack. Cover the pot and steam the bread about 3 hours or until tests done with a toothpick. Serve warm with “Buttery Spread.”
