Microwave Berry Cobbler

Perfect for hot summer days when you don't want to use your regular oven.

Ingredients

  • 1/4 cup softened butter
  • 1/2 cup sugar
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/3 cup milk
  • 1 1/2 cup berries
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup orange juice
  • cool-whip for garnish

Preparation

Step 1

Grease an 8X8 microwavable baking dish with spray-oil. In a large bowl, cream the butter and 1/2 cup sugar. Combine the flour, baking powder, and salt, and add to the creamed mixture. Add the milk, and spread the batter in the greased dish. In a microwavable bowl, combine the berries, 1/2 cup sugar, and cinnamon. Microwave at 100% for 2-3 minutes, until berries are soft. Add the orange juice, and microwave at 70% for 10-15 minutes. The cobbler-cake will rise up through the berries and its edges will turn golden brown. It will have a crumbly coffee--cake texture when it's done. Serve warm with whipped cream or cool-whip topping.
