Ten Dozen Zucchini Muffins

This batter may be used at once or cover, store in the refrigerator and use as needed.

Ingredients

  • 15 oz (400 g) box Raisin Bran
  • 3 cups sugar
  • 5 cups flour
  • 5 tsp salt
  • 5 tsp soda
  • 2 cups zucchini, grated
  • 4 eggs, beaten
  • 1 qt buttermilk
  • 1 cup melted shortening or Mazola oil

Preparation

Step 1

In a very large mixing bowl, mix cereal, sugar, flour, salt and soda and set aside. Wash and grate the zucchini and add all the remaining ingredients. Mix well. Preheat oven to 400 F. Fill greased or lined muffin pans 2/3 full. Bake for 15 to 20 minutes.
