Ingredients
- 1 tbsp yeast
- 1/4 cup sweet cider, lukewarm
- 2 cups zucchini, grated fine
- 1/2 cup molasses
- 1/2 cup oil
- 1 egg, beaten
- 1/3 cup buttermilk
- 1 cup cornmeal
- 1 cup whole wheat flour
- 1 tbsp mixed spices (nutmeg, cloves, allspice, cinnamon, ginger)
- 3 tbsp nutritional yeast
- 1 cup seedless raisins
Preparation
Step 1
Stir yeast into lukewarm cider. Set aside. Blend zucchini, molasses, oil, egg and buttermilk. Blend with yeast mixture. Stir in rest of the ingredients. Turn into oiled 8-by-12-inch pan. Set in a warm place for 30 minutes to rise slightly. Bake at 350 F or 180 C for 35 to 40 minutes. Cut into squares to serve.
