Easy Elbow Macaroni Salad (Sue S)

Ingredients

  • 8 oz elbow macaroni
  • 1/2 tsp salt
  • 1/4 cup chopped green onions
  • 1/4 tsp pepper
  • 1 cup green bell pepper
  • Other veggies as desired (red, yellow, orange peppers; cucumbers, cheese chunks, etc)
  • 1/2 cup fat free mayonnaise
  • 1/2 cup fat free sour cream
  • 1 Tbsp dijon mustard
  • 1 tsp sugar or sugar substitute
  • 2 Tbsp vinegar
  • 3 Tbsp lowfat milk
  • 1 Tbsp salad seasoning.

Preparation

Step 1

Cook and drain pasta by package directions. Rinse with cold water to cool.

Combine mayo, sour cream, milk, vinegar, mustard, sugar, salt, pepper in a large bowl.

Add macaroni, veggies, etc to dressing mixture and toss to coat. Chill to blend flavors.
